Sweet Potato Picnic Salad

Steam Sweet Potatoes 5 minutes.

Sweet Potato Picnic Salad

Serves 4

  • 1 sweet potato, scrubbed and diced
  • 1 large mango, peeled and diced
  • 1 small onion or ½ large onion, diced
  • 1 red pepper, seeded and diced
  • 1 avocado, peeled and diced
  • 2 cups cooked red beans or 1 can drained and rinsed
  • 2 Tablespoons pumpkin seeds
  • 2 Tablespoons Balsamic vinegar
  • 3 Tablespoons Olive oil
  • ¼ teaspoon salt or to taste no more than ½ teaspoon
  • Pepper to taste
  • ¼ cup snipped cilantro (I always add a little more – since I can live on this herb.)

Steam sweet potatoes for 5 minutes. Mix together with rest of ingredients. Let sit for about an hour in the fridge to meld the flavors. Enjoy with your favorite chips or as a side salad. It can also be served in a pita for a quick lunch or light dinner.
